Turkish delight in Tanzania and Zanzibar: the lokum, the gift shops of Stone Town and the hotel shelf

Buyers come from two places, the supermarkets of Dar es Salaam and the island where a visitor expects a box of something to carry home. Here is what the lokum is, which box goes on which shelf, and why it is the easiest Turkish line for the climate. Plain lokum travels dry and keeps well in a warm store, which is what makes it the simplest line to start an island order with.

The lokum

Starch-set cubes dusted with sugar or coconut, rose, lemon and pomegranate, the Gaziantep finger roll filled with whole pistachio and coated in coconut or kadayif, and chocolate covered pieces for the confectionery case. Made in Gaziantep, boxed for retail or cut in bulk for the counter. The pistachio roll is the line the hotels ask for first, because the pistachio is what Gaziantep is known for and the roll cuts into pieces that fit a tray. The easiest line for the climate

Plain lokum does not melt. It travels dry, it sits on a warm shelf without complaint, and it keeps for the months we declare, which makes it the easiest Turkish gift line for a country where chocolate needs a reefer and a chiller. An importer usually starts with the box for that reason, and adds the chocolate covered pieces, in the reefer with the chocolate lines, when the supermarket shelf asks for them. For a duka that cannot sell chocolate at all, the wrapped lokum piece is the one Turkish sweet that sits next to the wrapped candy.

Stone Town, the hotels and the airport

Zanzibar sells to visitors, and a visitor buys a box to carry home: the dusted cube in a printed box is the gift line for the gift shops of Stone Town, the hotel shops and the airport, and a Turkish box sits well next to the island’s own spices. The supermarket shelf in Dar takes the same box and the pistachio roll cut to order at the deli counter. The route into the country

Plain lokum travels dry all year to Dar es Salaam; the chocolate covered pieces go in the reefer with the chocolate lines. The label carries English, with Swahili if you want it, the ingredients, the net weight, the dates and the importer’s name; the certificate of conformity travel per line, and copies of our certificates are available on request. The unit of sale is one mixed container, so Turkish delight travels on its own pallet next to chocolate, wafers and sweets rather than as a full load.
