How bulk-food stores source Turkish delight, Jordan almonds and dragées

A scoop, a bag, a price by weight. Behind the bin is a distributor’s carton, and behind the carton a producer in Gaziantep. What each link in that chain asks for, from the supplier’s side.

The chain

A bulk-food store usually buys from a distributor, and the distributor either imports or buys from an importer. The importer buys a container. That is the link we quote: a distributor or importer filling one mixed container with the lines its bins and its grocer customers need, chocolate covered almonds bulk next to Turkish delight next to sugared almonds, each on its own pallet. A store group that imports for itself is quoted the same way; a single store is better served by its distributor.

What a bulk-bin product needs

Four things. A lined, closed carton, because the bin is open and the carton is the last sealed stage. A shelf life stated on our data sheet, because the bin card has to carry it. Pieces that survive scooping: a dusting that does not cake, a shell that does not chip, a cube that does not weld to its neighbour. And a carton packed one product, one colour, so the bin stays true to its card. Case weight and pallet plan are stated per line in the offer.

Turkish delight in the bin

The bulk cube is the assorted fruit-flavour lokum, dusted with icing sugar or a starch mix, cut to a consistent size. Humidity is its enemy: a lined carton and a cool store keep the dusting dry. Chocolate-covered pieces belong on a cooler shelf and travel under the chocolate rule. The pistachio finger roll is a retail-box product rather than a bin product, though a distributor often carries both. The Turkish delight page lists the groups.

Dragées and Jordan almonds

Bulk chocolate covered almonds and hazelnuts, milk and dark, the chocolate covered almonds in bulk that fill the biggest bin; pastel sugared almonds, single colour or mixed; jordan almonds bulk for the wedding trade; pebbles and mushrooms for the children’s bin. The finish matters under store lights: a polished, glazed shell keeps its shine and seals the piece, a rough finish is softer to bite and more open. Shelf life, plainly

A coated nut is two products in one, a nut that can go rancid and a coating that can bloom; we set the date from both and state it on the data sheet. In the bin, turnover does the rest: a product that moves is a product that tastes right. The shelf-life article goes into storage.

One container, several bins

The mixed container is built for this channel. Dry lines, sugared almonds and plain lokum, and chocolate lines share it, each on its own pallet; for the warm months a reefer is quoted so the chocolate arrives as it left. The route is Mersin to Montreal, Halifax or Vancouver, and the Canada page lists what stays the same on every offer.

Do you sell to bulk-food stores directly?

The unit of sale is one full container. A store group that imports can buy it; a single store is usually served by its distributor, and we quote the distributor.

Can the cartons be smaller for a bin?

Case weight is set per line and stated in the offer; the carton is packed one product, one colour.
