Dubai chocolate in Cameroon: the bar behind the searches, and where the pistachio comes from

The bar reached Douala through a phone screen, and in a country that grows the cocoa the interesting part is not the chocolate. It is the filling. Here is what the bar is, why the pistachio comes from Gaziantep, which shelf it can live on, and what an importer or a local maker buys.

The bar

A thick milk chocolate shell filled with pistachio cream and toasted kadayif, the shredded pastry that gives the bite its crunch. The name comes from the city where it went viral; the filling comes from further north. Pistachio is grown around Gaziantep and kadayif is made there in the same streets, which is why we were making pistachio and kadayif fillings long before the bar had a name, and why the bar is now made there in retail, gift and catering formats.

The cocoa country

Cameroon grows the cocoa and has makers who pour a good shell; what they cannot grow is the pistachio, and what they do not make is the kadayif. That is the part we quote: the finished bar under a Turkish brand for the supermarket chiller and the gift shelf, and the pistachio cream and the kadayif filling in bulk for the makers in Douala and Yaoundé that want to pour their own. The shelf question

This bar is chocolate, and in Cameroon that decides where it can be sold: the supermarket with a chiller, the hotel, the airport, the boutique that keeps a fridge, not the kiosk in the afternoon heat. It travels in a reefer year round on this route and is stated as chocolate on the offer, next to the compound lines that go to the everyday shelf. An importer that plans the two shelves separately sells both.

The price question

For a shopper the price is set by the shop; for an importer it is in the offer: the price per bar in US dollars, the case count, the pallet plan, the tariff line and the duty that applies on the day, with the conformity cost where it applies. Nothing that changes with the exchange rate or the season is printed on this site. The Cameroon page lists what stays the same on every offer.

Under whose name

In our standard packs from the first container, or under your own brand: the Cameroonian private label page goes through the formats, the label content in French and English, and the artwork approval. A maker that wants a pistachio bar under its own name without building a pistachio supply has a producer for it, and a supplier for the filling if it prefers to pour its own.

The name comes from where it went viral. The pistachio and the kadayif come from around Gaziantep, and the bars and fillings we quote are made there.

Do you sell the filling on its own?

Yes: pistachio cream in jars and pails, and the kadayif filling, from us, in the formats the offer states, for makers that pour their own shells.

Does the bar need a reefer?

Yes, year round on this route, and a chiller at the other end; it is stated as chocolate on the offer.
