Dubai chocolate in Yemen: the bar, what is inside it and where it is made

The bar with pistachio cream and toasted kadayif under a chocolate shell became famous from Dubai, and that is where the name comes from. The question that reaches a supplier is a different one: who makes it in volume, with how much pistachio in it, and in which formats a wholesaler can buy. This page answers from the production side.

The name and the origin

The bar is simple to describe and hard to make consistently: a chocolate shell, a filling of pistachio cream with roasted kadayif for the crunch. It spread from Dubai, and the name followed it.

The two ingredients that define it do not. Pistachio grows around Gaziantep in south-eastern Türkiye and kadayif is made there, which is why so much of what is sold under this name is produced in that region and shipped from it.

What is inside

The pistachio percentage differs from producer to producer, and it is the single number that separates two bars that look identical on a shelf. The offer states it per line, with the bar weight, the shelf life and the pack format, instead of a general claim.

There is a second distinction worth settling before an order: whether the coating is real chocolate or a compound. It changes the price, how the bar behaves on an uncooled shelf and how the line has to be described on the label.

Three formats

The third is often the larger order, because a shop that already has a kitchen would rather buy the filling than the bar.

Temperature is not optional

This is a chocolate line, and on a warm route to a warm shelf it is quoted in a reefer. Turkish delight, sugared almonds, jellies and pistachio products travel dry, and both can share one container.

A bar that arrives bloomed is a bar the buyer does not repeat, which is why the temperature question is settled in the offer rather than after the booking.

Who buys which format

The wholesaler that supplies groceries wants the retail bar and a price per carton. The gift house wants the box and the season behind it. The sweets shop with its own kitchen wants the jar and the paste, because it sells its own version at a better margin than a resold bar.

One container can carry all three, which is usually how a first order is put together rather than betting the whole load on one of them.

What travels with it

A first container rarely carries a single line. Pistachio tablets, boxed Turkish delight, the pistachio roll, dragées for the occasion trade and wrapped confectionery for the everyday shelf usually travel in the same shipment, because they share an origin, a set of documents and a pallet plan.
