One confection, three names
A whole almond panned in layers of hard sugar until the shell is smooth. In Canada the wedding trade says sugared almonds and the bulk trade says Jordan almonds; Italian families say confetti and the French say dragée. The recipe is the same, and the panning drums that make it also make the chocolate dragées on the dragée page. Canadian spelling is used here on purpose: favours, colours.
Why five
The tradition came with families from the Mediterranean and the Middle East, and it is still theirs: five almonds in tulle or a small box, one wish each, health, wealth, happiness, fertility and long life. Bitter under a sweet coat, like marriage; an odd number so the couple cannot be divided. The origin article tells the rest. For a favour maker the practical reading is simpler: the count per favour is fixed by custom, so the order is counted in almonds, not in kilograms.
Colours and finishes
White for weddings; pastel pink, blue, lilac and mint for showers and christenings; silver and gold for anniversaries. Coloured sugared almonds are ordered by colour, one colour per carton, or as a mix. The finish matters as much as the colour: a matte shell reads classic, a pearl or glazed shell catches light in a photograph. Shell thickness decides the bite; the thicker traditional shell keeps for months and stays shiny. Samples decide the rest; the samples page explains how.
Buying by the carton
Sugared almonds bulk, jordan almonds bulk, sugared almonds wedding favours by the case: the unit is the lined bulk carton, single colour or mixed; case weight and pallet plan are stated per line in the offer, and the shelf life on our data sheet. Sugared almonds travel dry all year, which makes them an easy line to add next to chocolate and Turkish delight in one container. A favour maker usually buys through a distributor; a distributor or an importer buys the container. Either way the carton that reaches the workbench came off the pan in Gaziantep.
Chocolate under the shell
The sibling for favours is the chocolate dragée: an almond or hazelnut in chocolate under a thin pastel shell, or polished without a shell. It photographs the same and tastes different, and it follows the chocolate rule in transit: a controlled temperature, a reefer for the warm months. Many favour ranges carry both, one carton each, and the container does not mind.

Are sugared almonds a tree-nut product?
Yes. The centre is an almond and it is declared as such. The bilingual label and the data sheet carry the allergen line.
Can we order a single colour?
Yes. Cartons are packed by colour; mixes are also available. The colours available per line are in the offer.
How far ahead should a favour maker plan?
By season. The lead time per line is stated in the offer and sea freight adds transit, so the wedding season is ordered well before it starts.
