Dubai chocolate for Sweden: what is in the bar, and where it is made

Sweden searches for this bar in both languages — around 2,400 a month in English and close to 15,000 in Swedish — and the grocery trade has caught up: the chains publish recipes for it and the Swedish Wikipedia has an article on it. The bar is past the trend stage. For an importer the question is no longer whether it sells, but which version of it belongs on a shelf that already carries several.

What the bar is

Underneath the chocolate there are two things: pistachio spread and kadayıf, the hair-thin strands of stretched dough that give the crunch. Neither is decoration. A bar with a thin pistachio filling and no kadayıf does not taste like the one people remember, and it sits on the shelf.

Both come from Gaziantep. The pistachio is grown and roasted here, the kadayıf is made here, and the filling happens in the same city — which is why producers here can build the bar without buying anything in. The strands are toasted first, or they soften into the filling instead of holding their bite.

Chocolate or compound coating

This decides the label. Many bars in this category are coated with a vegetable-fat compound rather than real chocolate. Compound is not wrong in itself — it travels better and costs less — but EU rules do not allow it to be called chocolate on the pack, and Sweden is in the EU.

It is a naming rule rather than a verdict on the product, and it belongs at the quotation stage because it changes the product name above the ingredient list. We state which each line is before the artwork is made, not after.

The pistachio jar beside it

The same filling sells on its own. Swedish search for pistagekräm runs into the thousands a month, and one of the biggest terms is the one with a grocery chain’s name attached to it — a shelf signal, not a recipe signal. The jar product is a spread rather than a dairy cream, and the technical data sheet gives the pistachio percentage for the label.

On a Swedish shelf that jar belongs with the pålägg, not with the dairy; bulk pistachio filling in larger formats is sourced on request.

Where an importer sits

What is not covered on the Swedish shelf is the part that wants a named origin: pistachio stated as Gaziantep pistachio on the technical data sheet, kadayıf that is actually kadayıf, and a percentage written down. We are the manufacturer and exporter — we make the lines in our own factory and load several lines in one container, so the bar can travel with lokum, dragées and pistachio spread instead of filling a container on its own.

On the most recent full year of figures Türkiye was the seventeenth source of Sweden’s chocolate imports and the thirteenth of its sugar confectionery: an alternative on specific lines, not the incumbent.

Two things that go wrong

The first is buying from the photograph. A cross-section looks much the same whether the filling is a quarter of the bar or a smear. The technical data sheet is where that is settled, before a sample is even sent.

The second is reading the English numbers as the market. Swedish demand runs at roughly six times the English-language demand inside the same country, and the buying words here are Swedish.

Heat

Chocolate and chocolate-coated products travel at +18/+20 °C. For a mixed container in the warm months we quote a reefer; if you prefer a dry container, the temperature risk goes to you in writing before loading. Lokum, sugared almonds and jellies travel dry all year.
