The cut is the first difference
Lokum destined for pastry is cut into small, even cubes so that it distributes through the filling without leaving cavities. Large cubes melt unevenly and pool. When you send the list, give the cube size the bakery actually works with, in millimetres — not «small» or «large». The offer states the cut, not just the product.
For repacking at a tray line the same reference can be cut larger. It is the same production line, a different blade. The cut is fixed before the lot is scheduled; after packing it cannot be corrected.
The dusting is the second, and it reaches the label
Lokum is dusted so the pieces do not stick. In the oven, starch behaves differently from icing sugar, and an excess of either shows in the cut face of the finished banitsa. The producer can adjust the dusting for bakery use; it is an ordinary request and it goes on the technical data sheet.
It is not only texture. What is used for dusting appears in the ingredient list on the label. Change the dusting and the label text changes, so the two are decided together rather than one after the other.
Bulk units, not retail boxes
For bakery and pastry work we ship 2–3 kg inner units in bulk cartons, not 350 g boxes. The minimum is set per line and stated in the offer. Retail boxes stay a separate reference for the shop shelf.
The bulk unit is ordered plain or with pistachio, walnut or hazelnut, and the variant is stated per reference. The offer gives the case size, the pallet plan and the lead time for each.
Season, and why it is ordered early
Demand for baking lokum rises with the baking season. The lead time is the one in the offer and it runs from receipt of the deposit — so the order is placed against that lead time, not against the holiday. One mixed container can carry the bulk lokum for the bakery trade and the retail boxes for the shop in the same load.
A practical advantage of this product
Lokum travels in a dry container all year, like sugared almonds and gelled sweets. It does not need a refrigerated unit, unlike chocolate, which travels at +18/+20 °C. In a mixed container loaded in summer the reefer is taken for the chocolate side and the lokum rides alongside.
That matters for a Bulgarian buyer more than for most: the land route across the shared border is short enough that the temperature question is about the load, not about weeks at sea.

Within two working days you have a written offer: cut and dusting per reference, the minimum per line, case weight and dimensions, the pallet plan and the lead time.
Can you supply lokum cut for baking?
Yes. Lokum for banitsa and other pastry is cut smaller and dusted differently from the gift-box product. Give us the cube size in millimetres and the use, and the cut and dusting are set before the lot is run.
