Who the cukrászati kellék trade actually is
A cukrászda, a hotel pastry kitchen, a wedding cake maker and a home baker with a Sunday order all buy the same way: by the piece, the jar or the kilo bag, from a supply shop or a webshop that delivers overnight. It buys by the case, and its catalogue runs from tins and boxes through glazes to fillings.
It is not looking for a brand to build, but for a line its customers already ask for by name, in a format it can shelve, price per unit and reorder.
What from Gaziantep belongs on that shelf
Five groups fit. Pistachio spread in jars, for the decorator who fills and finishes. Kadayif, the shredded pastry a Hungarian kitchen now wants because the pistachio-and-kadayif bar taught it the texture. Chocolate dragées and sugared almonds in bulk cartons, sorted by colour and calibre, which is how a wedding counter buys them. Filled bars for the resale shelf, and Turkish delight in bulk for the counter that sells by weight.
Dragées, sugared almonds and Turkish delight move dry all year. Chocolate and coated lines travel at +18/+20 °C; a reefer is offered in the warm months, and a dry container shifts that risk to the buyer in writing.
Pisztáciakrém and pisztácia paszta are not the same jar
Hungarian search splits the pistachio jar into two words, and the split matters. Pisztáciakrém is the sweet spreadable cream — pistachio with sugar and milk solids — piped into a bar filling or a cake layer. Pisztácia paszta is the raw ingredient: pure ground pistachio, unsweetened, dosed by the gram into a buttercream or an ice cream base.
What we sell in jars is the first one: a spread, not the 100% pastry paste. A shop that lists it under paszta will hear about it from the first confectioner who opens a lid. Sold as krém, on the decoration shelf rather than the raw ingredient shelf, it moves easily.
What we do not put on that shelf
The same catalogue carries what we do not lead with. Couverture, chocolate sold loose by the kilo, raw nuts and 100% pistachio pastry paste are not in our main range. They can be supplied on request, in which case we confirm the composition and format before any offer — or we say no.
One labelling point sits underneath: in theEU a vegetable-fat coating cannot be labelled chocolate, so the offer says per line whether a coating is chocolate or a cocoa glaze.
What the import figures say about the Turkish line
Hungary imported 588.1 million dollars of chocolate in 2025; Türkiye sits 11th with a 1.42% share. The other number matters more: Turkish goods land at 14.96 dollars a kilo, the highest unit value among the leading suppliers. Germany holds 26.29% at 9.56, Poland 13.50% at 8.82, Slovakia 12.14% at 7.50, Italy 7.83% at 8.34.
From a pastry shop’s side that is no weakness: Turkish goods already arrive as speciality rather than volume filler. In sugar confectionery, a 144.4 million dollar market, Türkiye is 4th with 4.51% at 3.38 a kilo. Hungary is in the EU, so goods travel on an A.TR movement certificate; the offer states what applies on the day.
What to send us first
Send the lines you would shelve and how much of each. The minimum is per line, not per container, so a first order can carry six or seven items in measured quantities. The unit of sale is one full container or truck, each line on its own pallet, one packing list, one movement certificate.
The written offer follows within two working days and names, per line, the specification, allergens, net weight, case and pallet data, the minimum and the tariff heading. Is the pistachio jar the same thing as pisztácia paszta?
No. What we sell in jars is a sweet spreadable cream, a pisztáciakrém. The unsweetened 100% pastry paste is not in our main range; it can be supplied on request, with the composition confirmed before an offer.
Can a pastry supply shop order just a few cases?
