Pistachio paste or pistachio spread? What the Russian search term hides

Type «фисташковая паста» into a Russian search box and the results page answers a question you may not have asked. It fills with ingredient shops for confectioners, wholesale listings priced оптом от 1 кг, and pastry handbooks. That is one product with one buyer. The jar we pack is a different product with a different buyer, and the name the two share has sent more than one first sample into the bin.

One term, two products

The Russian pastry channel and the Russian retail shelf reach for the same two words and mean opposite things by them. In the professional channel паста names a raw material: nuts and nothing else, bought by weight and dosed into a recipe. On the shelf the same word ends up printed on a jar that a household opens with a spoon.

A buyer who reads your offer through the wrong meaning judges your sample against a specification it was never built to meet. Nothing about the sample is wrong; the label on the conversation is.

What the pastry channel is actually buying

Look at who ranks for the term and the picture is unambiguous: ingredient e-commerce aimed at pastry professionals, wholesale pages quoting per-kilo tiers from a single kilo upward, technique guides for creams and fillings. That audience wants 100% pistachio with no sugar added, a predictable colour, a known fat release and a bulk format — a pail or a bucket, never a retail jar.

It is a real demand, and it deserves a straight answer. That pastry-grade paste is not part of our main range. We can supply it on request, and we confirm composition, grind and format before anything is quoted.

What is actually in our jar

Our pistachio product is a sweetened, spreadable cream in a jar: a finished consumer good headed for a shelf, a gift set or a food-service portion, not for a pâtissier's mixing bowl. It moves the way shelf goods move — through importers and distributors already working with retail, with a barcode, a consumer label and a case configuration behind it.

Call it a paste in a Russian-language offer and you invite a pastry buyer who opens it, tastes sugar where the recipe needed none, and stops reading. Naming it correctly costs nothing and keeps the sample in front of the person who can actually place the order.

Pistachio percentage belongs in the quote, line by line

The obvious next question — how much pistachio — has no blanket answer: it is set per production line and per recipe, not per exporter. We do not publish one figure that would be wrong for part of what we carry.

The quote states it line by line, together with the technical specification, the full ingredient and allergen statement, net weight, case and pallet data, the minimum for that line and the customs tariff heading. The rest of the range sits on the pistachio page.

Private label and the EAEU label frame

Under private label both the jar format and the label content change, and neither is settled by us alone. We build the label from our technical specification, and nothing reaches a printing plate without your written approval.

For Russia the frame around that label is the Eurasian Economic Union: the consumer label is in Russian, the product carries the EAC conformity mark, and the declaration of conformity is held on the importer's side. Temperature, the bar version, and what to send us

The same flavour profile also exists as a bar — the pistachio-and-kataifi dubai style bar — and it travels in the same container as the jars, on its own pallet, under one packing list. Chocolate and chocolate-coated lines ride at +18/+20 °C; in hot months a reefer is offered, and if a dry container is preferred the temperature risk passes to the buyer in writing before loading.

It is not part of our main range. It can be supplied on request, with composition, grind and bulk format confirmed before we quote — so ask for it by name rather than assuming the jar is the same thing.
